
2021 Vinification Slay Rosé.
HOW SLAY IS MADE...
At optimal ripeness, about 24 Brix, the most delicious Pinot Noir grapes from Carneros were harvested to make a rich, red wine.
Once all the grapes were de-stemmed and put in tank for fermentation some of the beautiful pink juice was bled off and put into a separate tank to become the 2021 Slay Rosé.
The juice began fermenting on it’s own and monitored daily until ALL the sugars were consumed by the yeasts.
A dose of SO2 was then added to halt the secondary, malo-lactic fermentation and the wine aged in stainless tank until bottling about 6 months later.
The 2021 has a beautiful pick hue and a sweet, floral nose. The mouth is bursting with wild strawberries, guava juice and watermelon rind. There is just the right amount of acidity to balance the sweet fruit and keep you coming back for more.
